Ya me han ofrecido varias alternativas, aunque no sé si son de 4 ADCs y entonces se nos quedan cortas.
Te digo todo lo que me han dicho para que lo analices tú y me respondas, que estos temas se me quedan muy grandes y no entiendo.
1º

possible button combinations, hmmm...
are there any keys which may not be pressed together, so you can do matrix-scanning on those, at least?
i will see if there is an I2C ADC/GPIO IC around... also now SPI is available so you could use that.
2º
ok so the MCP3004 is an SPI-based 10-bit ADC 4 channel, $1.50 in 5k volume, 200k-samples/sec, that's possibly waay more than you need? it's popular on adafruit and other places

and if you use the next one up from the PCA9536 - the 16-bit one - i think you're covered?

Con lo que me respondas tú a estas 3 preguntas-proposiciones, les respondo a ver que nos dicen. La verdad es que ellos saben bastante de esto, no han tardado mucho en ofrecer soluciones xD

Para @Segata Sanshiro también. Si se nos queda corto el MCP3004 , mira a ver el MCP3008, que creo que tiene más ADCs (míralo a ver). Además me he dado cuenta que está muy usado en la Raspberry, por lo que hay muchos ejemplos:
